Perfect Roast Chicken with Popcorn Stuffing

Mums cooking has taken on legendary status with factual stories often being embellished and exaggerated beyond belief.

Her early adaptation to microwave cookery (without even going to classes) made her the hostess with the mostest.  She experimented with Cuisine Minceur, Tasajarra bread, fondues, pressure cookers and whatever meat cuts and vegetables were available.

As a family we never went to bed hungry (unless we had been very naughty) and we developed an inquisitive and open nature towards all things culinary.  It was from my mother that I learnt to collect cooking books and recipes from magazines...then improvise with what you have on hand.

So it was no surprise today when mum sent me an email with an easy roast chicken recipe.  I kid you not, this is what she shared with me....

Here is a chicken recipe that also includes the use of popcorn as a stuffing -- imagine that.  When I found this recipe, I thought it  was perfect for people like me, who are not sure how to tell when poultry is thoroughly cooked, but not dried out.  Give this a try. 

  • 1 chicken
  • 1 cup melted butter
  • 1 cup of your favourite stuffing
  • 1 cup uncooked  popcorn
  • Salt/pepper to taste
  1. Preheat oven to 200 degrees.
  2. Brush chicken well with melted butter
  3. Season in and out with salt and pepper.
  4. Fill cavity with stuffing mixed with uncooked popcorn.
  5. Place in baking pan with the neck end toward the back of the oven.
  6. Listen for the popping sounds. 
  7. When the chicken's arse blows the oven door open and the chicken flies across the room and lands on the table, it's done and ready to eat.

And we thought Mum couldn't cook .....
